SUMMER TIME!!! The sun is out! The weather is HOT! And I love it! More than the weather, summer means grilling season! I don’t know if there’s anything better than a good barbeque! Speaking of, here’s a great recipe you may want to try:
Grilled Chicken with Homemade Barbeque Sauce
Prep time: 5 minutes
Cook time: 35 minutes
Yield: 2 servings
Ingredients: 1 ½ tablespoons of olive oil; ¼ cup of diced onion; 2 cloves of garlic minced; 5 tablespoons of ketchup; 3 tablespoons of honey; 3 tablespoons of brown sugar; 2 tablespoons of apple cider vinegar; 1 tablespoon of Worcestershire sauce; salt and pepper to taste; and 2 skinless, boneless chicken breasts.
Directions:
- Preheat grill for medium-high heat.
- Heat olive oil in a skillet over medium heat. Sauté the onion and garlic until tender. Stir in ketchup, honey, brown sugar, apple cider vinegar, Worcestershire sauce, salt, and pepper. Cook for a few minutes to thicken sauce. Remove from heat, and allow to cool.
- Lightly oil the grill grate. Dip chicken in sauce, and turn to coat. Cook on the grill for 10 to 15 minutes, turning once. Move chicken to the skillet with sauce. Simmer over medium heat for about 5 minutes on each side.
